7th & Carson

7th & Carson in Downtown Las Vegas has vegan options. For more vegan dining in Las Vegas, visit www.vegansbaby.com/vegansbaby2018

Cozy bar and restaurant 7th & Carson opened its doors late 2017. You’ve probably walked by and have seen its cute garden patio or peaked in to notice its open kitchen with brick oven … but if you’re vegan, chances are you never actually stopped in.

Well, times have changed.

7th & Carson added vegan options to their menu in the fall of 2018, and now there’s another option for vegan eats tucked into a block with VegeNation and Bomb Tacos.

This American tapas-style restaurant, so while you can totally order a dish for yourself, we suggest ordering a few plates to share. And, pairing them with a cocktail.

Start with one of the vegan-friendly salads: the Wood-Roasted Beet Salad or the Heirloom Tomato Salad. The beet salad includes a soft cashew cheese, roasted beets, orange, fresh herbs, and olive crumb so good that it could change even a solid olive naysayer’s mind. The tomato salad is just as delicious with a vegan feta, pine nut, mint, and sumac.

Move on to the Mushroom and Cashew Lettuce Wraps, a dish that owner Liam Dwyer says is popular among his non-vegan diners as well. Spoon sautéed wild mushrooms with fresh herbs into the Bibb lettuce cups and top with one of the sauces served with the dish, a savory cashew sauce or one with a kick.

If you’re looking for a cozy dish, try the Soft Polenta. The warm polenta is covered with a mushroom ragu and a vegetable demi glace reminiscent of a pot roast dinner … without the meat. It’s completely vegan– trust us — we made the chef confirm twice because it’s that spot on.

Stay tuned for more from Chef Gregg Fortunato and 7th & Carson. They continue to add new dishes. For whole plant enthusiasts, there Fortunato assures us there won’t be any mock meats added to the menu; he’d rather create flavorful dishes that shine on their own, something 7th & Carson’s guests would order whether they are vegan or not.

Kathryn Hartwig is a senior writer for Vegans, Baby. She decided to go vegan nearly a decade ago while searching for the perfect diet to compliment her role as a professional dancer. After experimenting with multitudes of fads, she Kat found a lifestyle that turned out to be more than a diet. She settled in Vegas with her husband/photographer Daniel, and puppy, Layla, after traveling the world on cruise ships and living in New York City. The family recently welcomed the birth of their first child, a true vegan baby.
