Welcome to the Chipotle of Bibimbap. If you’ve never tried a Korean Bibimbap before, now’s the time! A traditional dish from South Korea, bibimbap is a mixed rice bowl. At Bibim Kitchen in Las Vegas, you create your own vegan Bibimbap from a variety of options.

Choose from either a classic bowl or a hot bowl (it’s what we go for because they cook your rice in a stone bowl, crisping the outer layer of rice), then pick either white or purple rice (we chose purple) and have them add in the organic tofu.

After you’ve chosen the basics, then you can add up to six veggies — lettuce, carrots, radishes, broccoli, kimchi, spinach, shiitake mushrooms, corn, avocado, zucchini or bean sprouts — and sauce (nearly all are vegan) and toppers like sesame oil and seaweed.

Sound good? It is!
