Tequila. Mezcal. Vegan eats. These all exist at Salud Mexican Bistro, located near The Lakes in Las Vegas. Unlike other Mexican restaurants in town offering vegan options, Salud Mexican Bistro has upped the game dishing out unique eats that you can’t find elsewhere, such as the baked banana and beet salad complete with quinoa.

Did we mention they have tequila? And that the offerings top out at around a cool 100 between tequila and mezcal (the largest collection in Vegas, natch).

But, back to the food.

The vegan options at Salud Mexican Bistro are honored with an actual vegan menu (but ignore the desserts also listed on the menu, sadly the desserts have yet to be veganized but its something their chef, Israel Reyes, is working on).

Let’s start with that baked banana and beet salad we touched on. This bad boy is a perfect share plate (only because there will be more than one item you want to order as an entrée, swear) and comes loaded with kale, quinoa and corn alongside a lemon vinaigrette.

Salud Mexican Bistro’ vegan options also include chile relleno with cactus, grilled veggies, vegan cheese and a verde pepita sauce, a potato croquette with jalapeño and avocado sauce, soyviche, a spinach crust pizza (think spinach tortilla topped with lima bean paste, grilled veggies and vegan mozzarella, as well as veggie wrap, veggie fajitas and butternut squash enchiladas.

There’s more.

They also serve three varieties of vegan tacos — hibiscus, soy and mushroom. And, every Monday night Salud offers all-you-can-eat tacos and margaritas for $22 per person.

The best part though? After talking with the team at Salud, they told us that if the demand is strong enough for the restaurant to go all vegan, they will. So, get out there and show ’em what this vegan community has got!
